Peanutbutter Balls (Buckeye)

This simple Buckeye recipe creates irresistible peanut butter balls coated in rich chocolate, using only five ingredients. A quick, no-bake treat that will have everyone asking for more!

Ingredients:

  • 1 cup butter (2 sticks)
  • 1 cup creamy peanut butter
  • 3 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 6 ounces semi-sweet melting chocolate, melting wafers, or chocolate almond bark

Instructions:

  1. Cream the Mixture:
    Using electric beaters, blend the butter and peanut butter until smooth. Gradually add the powdered sugar, mixing until a creamy consistency forms. Stir in the vanilla extract and mix until fully incorporated.

  2. Form and Chill:
    Scoop about five dozen small mounds of the peanut butter mixture onto a baking sheet. Freeze for 20 - 30 minutes to firm them up, making it easier to roll them into smooth balls. I use gloves to form them, makes clean-up easier!

  3. Melt the Chocolate:
    While the peanut butter mounds are chilling, melt the chocolate, melting wafers, or chocolate almond bark according to the package directions.

  4. Dip and Coat:
    Remove from the freezer, form into smooth balls and then insert a toothpick into each peanut butter ball and dip it into the melted chocolate, allowing the excess chocolate to drip off. Place the coated balls onto a parchment-lined baking sheet to set.

  5. Store:
    Once set, transfer the Buckeyes to an airtight container and store them in the refrigerator or freezer.
